摘要:随着中外交流的日益频繁,大部分对中国文化,尤其是中国饮食文化感兴趣的外国游客聚集到中国,所以制定出一个标准精确的中国菜名的英译版越来越重要。为此,该文在深入分析中国菜肴名称的特点的基础上,提出中餐菜名英译的特点。通过对具体译例的分析,总结了直译、意译、音译等翻译技巧,以期在改善、提高中餐菜名的英译质量方面提供一些见解。

with the increase of Sino-foreign communication, a great number of Western tourists who are very much interested in Chinese culture, especially Chinese cuisine culture cluster in China, making it more and more necessary for China to come up with an accurate and authentic translation of Chinese dish names. To this end, based on an analysis of Chinese cuisine culture, this
thesis puts forward some characteristics for C-E translating of Chinese dish names. Through analyzing specific instances, it summarizes the translation skills of Chinese dish names such as literal translation, free translation and transliteration etc, aiming to provide some suggestions for improving the quality of C-E translation of Chinese dish names.

I. Introduction 简介
With the development of reform and opening up, China has attracted a great number of foreign tourists, many of whom are interested in Chinese culture, especially Chinese food. Therefore, a good translation of Chinese dish names seems to be of great importance.
The dietary culture in China has a long
history. Chinese dishes are famous not only for its color, aroma and flavor, but also for its brilliant culinary art. Chinese dish names, as an important part of Chinese dietary culture, are also varied and graceful. Chinese diet culture lays emphasis on its dish names which contain not only fact-telling names,but also names with metaphors, including both the profound historical and cultural background and folk and local customs. Some dish names are no longer just a single name, but an enjoyment of art; and some dish names even contain an ancient sad song or a touching legend. For example: “珍珠粥” comes from an hungry emperor who had met with misfortune and had nothing to eat but corn porridge; “鸿门宴” is made with crab spawn and edible bird's nest, symbolizing the battle between Chu and Han; “过桥米线”reflects love between wife and husband; and “东坡肉”,“叫化鸡”,“桃园三结义”,“狗不理包子”etc, all of which contain thick cultural implications.
